Pineapple Meringue Pie
Pineapple Meringue Pie is an moderately easy dinner. Made with 4 egg whites, 1 c. sugar, dash of salt, 1/2 tsp. cream of tartar and 1/2 pt. whipping cream, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Beat egg whites until frothy.
Add salt and cream of tartar. Beat until stiff.
Add sugar gradually with tablespoon and beat until very stiff.
Turn into greased 9-inch pie plate.
Bake 1 hour at 275Β°.
When cool, cut off top with sharp knife.
Fill with 1/2 pint cream, whipped, into which has been folded 1 small can of drained crushed pineapple.
Put top back on in jigsaw puzzle fashion.
Sprinkle with powdered sugar and refrigerate for several hours or overnight.
