Pickled Okra is an moderately easy dinner. Made with 4 lb. okra, 10 pods hot pepper, 10 garlic cloves, 3/4 pickling salt and 8 c. cider vinegar, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Wash okra and pack in jars.
Put 1 pod pepper and 1 clove garlic in each jar.
Combine salt, vinegar and water; heat to boiling.
Pour over okra and seal.
Let stand several weeks before opening.
Makes 10 pints.
