Pickled Beets
Pickled Beets is an moderately easy dinner. Made with 2 1/2 c. vinegar, 2 c. beet juice, 3 c. sugar, 6 tsp. salt and cloves, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Scrub beets, leaving small amount of green top on.
Cook beets until soft.
Rub off skin and green top.
Cut beets in chunks or if small, put in jars.
Then boil the vinegar, beet juice (you get from pot you cooked beets in), sugar and salt.
Pour over beets in jar.
Add 3 to 4 cloves per jar.
Makes about 5 quarts.
Can in hot water bath 10 minutes.
