Picante Chicken
Picante Chicken is an moderately easy dinner. Made with 6 boneless chicken breasts, 3/4 c. onion, coarsely chopped, 3 garlic cloves, minced, 1 tbsp. vegetable oil and 1 1/4 c. chicken broth, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Sprinkle chicken breasts with salt; set aside.
Cook onion and garlic in oil in 10-inch skillet 2 minutes.
Add chicken broth and salsa.
Bring to boil.
Stir in rice.
Arrange chicken breasts over rice.
Cover tightly and simmer 20 minutes.
Remove from heat.
Let stand, covered, until all liquid is absorbed, about 5 minutes. Garnish with tomato, avocado and cheese.
Serve with tortilla chips or soft flour tortillas.
