Pesto Salmon Soup
Pesto Salmon Soup is an impressive dinner. Made with 1 lb. salmon, poached in water, 4 c. fish stock with lemon, 1/2 stick butter, 1/2 stick oleo and 1 c. green onions, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

Saute onions, celery, basil, parsley and garlic in butter and oleo.
Add Parmesan cheese, sugar, ginger and flour.
Cook until it thickens.
PurΓ©e all of this in a processor.
Return to pan.
Add fish stock and cool until it thickens.
Add whipping cream and salmon.
If mixture is too thick, add enough milk to thin to desired consistency.
Heat through gently.
Serves 4 to 6.
