Coat baking sheet with cooking spray.
On lightly floured surface, roll dough to 12-inch square.
Place pepperoni on dough, leaving 1/2-inch border around edges.
Sprinkle with cheese.
Roll up dough, pinching to seal seam.
Trim ends to make even.
Cut dough into 1/2-inch thick slices.
Place on baking sheet(s) 2-inches apart.
Coat pieces of plastic wrap large enough to cover sheet(s) with cooking spray.
