Pepper Steak is an moderately easy dinner. Made with 1 1/2 lb. top beef round or sirloin, 3/4 to 1-inch thick, 1/4 c. cooking oil, 1 c. water, 1 medium onion, cut in 1/4-inch slices and 2 to 3 tsp. sugar, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Cut meat into strips.

Heat oil in large skillet.

Cook meat in oil until brown, about 5 minutes.

Stir in water, onion, garlic salt and ginger.

Heat to boiling.

Reduce heat, cover and simmer 15 to 20 minutes for round steak, 10 to 15 minutes for sirloin. Add green peppers during last 5 minutes.

Blend cornstarch, sugar and soy sauce.

Stir into meat mixture.

Cook, stirring constantly, until mixture thickens and boils.

Boil and stir 1 minute.

Add canned tomatoes.

Reduce heat.

Cover and cook until tomatoes are heated.

Serve over rice.
