Pecan Pie Muffins
Pecan Pie Muffins is an easy dinner. Made with 1 c. chopped pecans, 1 c. firmly packed brown sugar, 1/2 c. all-purpose flour, 2 large eggs and 1/2 c. butter or margarine, melted, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Combine first 3 ingredients in a large bowl; make a well in center of mixture.
Beat eggs until foamy.
Stir together eggs and butter; add to dry ingredients, stirring just until moistened. Place foil baking cups in muffin pans, and coat with cooking spray; spoon batter into cups, filling two-thirds full.
Bake at 350Β° for 20 to 25 minutes or until done.
Remove from pans immediately, and cool on wire racks.
Yield: 9 muffins.
