Peanut Patties
Peanut Patties is an moderately easy dinner. Made with 1 c. water, 3 c. sugar, 3 c. raw spanish peanuts, 1/3 c. butter or margarine and 1 c. light corn syrup, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Bring sugar, water and syrup to boil.
Add peanuts and coloring.
Cook over medium heat until hard-boil stage (250Β° on candy thermometer) about 25 to 30 minutes.
Remove from flame.
Add margarine and salt.
Beat until mixture is quite thick and creamy.
Drop in clusters on wax paper or greased cookie sheet.
If mixture hardens too rapidly, put back on stove on low heat a few minutes.
Stir well, then continue dropping.
