Peanut Coated Orange Roughy is an easy dinner. Made with 1 lb. orange roughy fillets, 1/2 c. milk, 4 oz. salted peanuts, finely chopped, 1/4 c. flour and 2 tbsp. butter, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Cut fillets into serving size pieces.
Combine peanuts and flour.
Dip fish into milk, then into flour mixture, coating well. Heat butter in pan.

Drain.
