Peanut Brittle(Microwave)
Peanut Brittle(Microwave) is an moderately easy dinner. Made with 1 c. sugar, 1 c. raw peanuts, 1/2 c. light karo syrup, 2 tbsp. margarine and 1 tsp. baking soda, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Mix the sugar, peanuts and syrup in large glass container. Microwave 4 minutes on High; stir.
Microwave another 2 minutes on High.
Add margarine to mixture; microwave 1 1/2 to 2 minutes on High (1 1/2 minutes will give you a chewier candy; 2 minutes will turn out a crunchy candy).
Add the remaining ingredients (baking soda, vanilla and salt) quickly to the boiled mixture.
Stir until mixture is "foamy."
Pour onto buttered baking sheet; spread to desired thickness.
After cooling, break into pieces.
