Peanut Brittle
Peanut Brittle is an moderately easy dinner. Made with 1 c. roasted salted peanuts, 1 c. sugar, 1/2 c. white corn syrup, 1 tsp. butter or margarine and 1 tsp. vanilla, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Stir together sugar and syrup in 1 1/2-quart casserole.
Cook 4 minutes on high.
Add peanuts and cook 3 more minutes on high. Add butter and vanilla, stir well.
Cook 1 1/2 minutes more or until peanuts are lightly browned and syrup is hot.
Add baking soda and stir gently until foamy, use wooden spoon.
Spread evenly on greased baking sheet.
Cool 1/2 to 1 hour.
Break into pieces and store in airtight container.
