Peanut Brittle
Peanut Brittle is an moderately easy dinner. Made with 1 c. karo syrup, 2 tbsp. butter, 1 c. raw peanuts, 1 heaping tsp. baking soda and 3 c. sugar, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Combine sugar, syrup and water in 4-quart saucepan. Bring to a boil on medium heat.
Boil for 5 minutes. Add butter, peanuts and salt.
Boil until thick, stirring constantly.
Drop a little bit in cup of cold water.
If candy cracks, it is done.
Turn off stove. Add vanilla and baking soda.
Stir. (Be careful, mixture will bubble up and pop a little.)
Pour into 2 buttered 9 x 2 x 13-inch pans.
Let cool.
Break into pieces.
