Peanut Brittle
Peanut Brittle is an moderately easy dinner. Made with 2 c. sugar, 1/2 c. light corn syrup, 1/4 c. boiling water, 2 c. dry roasted peanuts and 1 tsp. butter or margarine, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Combine first 3 ingredients in large, heavy saucepan.
Cook over low heat, stirring constantly, until sugar dissolves.
Cover and cook over heat for 2 to 3 minutes to melt sugar crystals on sides of pan.
Uncover.
Add peanuts and cook, stirring occasionally, to hard-crack stage (300Β°).
Stir in butter and soda.
