Peanut Brittle
Peanut Brittle is an moderately easy dinner you can prepare in about 1 hour 18 minutes. Made with c. sugar, c. water, c. white karo syrup, butter (size of egg) and qt. raw peanuts, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Put sugar, water, vinegar and syrup in a black skillet or heavy saucepan.
Cook vigorously until the mixture will spin a thread.
Reduce heat, add peanuts and cook until they turn a golden brown, stirring constantly.
(Be sure to let them brown because this is the key to the good taste of this recipe.)
Reduce heat again and add butter and stir well.
Add soda and mix well. Pour onto 2 well-buttered cookie sheets or marble.
Let cool slightly and pull.
(I loosen all sides first and then pull and hack off with knife.)
