Peach Rum Jam
Peach Rum Jam is an easy dinner. Made with 3 lb. fully ripe peaches, scalded, peeled and finely chopped (4 c. chopped), 1 (1 3/4 oz.) pkg. powdered fruit pectin, 5 c. sugar and 1/4 c. light rum, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Combine peaches and pectin in a very large saucepan or Dutch oven.
Place over high heat and bring to a full rolling boil, stirring constantly.
Immediately add all the sugar and stir. Again bring to a full rolling boil and boil hard for 1 minute, stirring constantly.
