Pasta Salad *
Pasta Salad * is an moderately easy dinner. Made with 3 large ripe tomatoes (2 1/2 lb.), 4 cloves garlic, 1/2 tsp. red pepper flakes, 1/2 c. fresh basil and salt and pepper, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Chop tomatoes (approximately 6 cups) in large bowl.
Add seasonings and oil.
Let stand several hours or overnight; return to room temperature.
Cook pasta.
Add 1/4 cup oil from tomatoes and Parmesan to hot pasta and toss.
Add 1/2 tomatoes; toss. Grate white cheese; add to pasta with rest of tomatoes.
Toss and serve.
