Pasta Primavera Casserole
Pasta Primavera Casserole is an impressive dinner. Made with 1 (16 oz.) pkg. ronzoni ziti, 2 medium zucchini, cut into strips, 2 red peppers, cut into strips, 2 c. sliced mushrooms and 1 c. chopped scallions, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Cook pasta as directed; drain.
Spoon into greased 14 x 10 x 2 1/2-inch baking dish.
Saute zucchini, red peppers, mushrooms and scallions in large skillet for 3 or 4 minutes. Add tomatoes. Spoon over pasta.
Place flour in the skillet.
Blend in milk. Add broth, nutmeg and pepper.
Cook and stir over medium heat until mixture thickens; add spinach and pour over vegetables. Cover; bake at 350Β° for 40 to 45 minutes.
Garnish with parsley, if desired.
Makes 8 servings.
