Pasta Primavera
Pasta Primavera is an impressive dinner. Made with 4 tsp. olive oil, 1 clove garlic, crushed, 1/2 c. chopped onion, 1 c. sliced zucchini and 3/4 c. sliced mushrooms, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
In a large skillet, heat olive oil. Add garlic, onion, zucchini and mushrooms.
Saute until onion is translucent.
Add broccoli and broth. Cover and steam 5 to 7 minutes or until broccoli is just tender-crisp.
Add tomatoes, parsley, lemon juice and seasonings.
Toss thoroughly.
Serve over spaghetti. Sprinkle with Mozzarella and Parmesan.
