Party Potato Casserole
Party Potato Casserole is an moderately easy dinner. Made with 8 potatoes (2 1/2 lb.), water, 1 (8 oz.) container sour cream, 2 tbsp. milk and butter or margarine, softened, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Two hours before serving, cook potatoes in water until fork-tender.
Cool slightly; peel.
Mix at low speed, potatoes, sour cream, milk, 2 tablespoons butter, 1/2 teaspoon salt and 1/8 teaspoon pepper until smooth and fluffy.
Set aside.
Preheat oven to 350°.
In small bowl, mix well squash with 1 tablespoon butter and 1/8 teaspoon salt.
Set aside.
In another small bowl, beat egg slightly.
Add spinach, onion, 1 tablespoon butter and 1/8 teaspoon salt.
Mix well; set aside.
In 2-quart deep dish, evenly layer mashed potato mixture with squash and spinach mixtures.
Bake at 350° for 40 minutes or until heated through.
Remove from heat and sprinkle with cheese; let stand until cheese melts.
Yields 10 servings.
