Parmesan Zucchini
Parmesan Zucchini is an moderately easy dinner. Made with 3 to 4 large, sliced zucchini squash, 1 large, chopped bell pepper, 1 large, chopped onion, 4 stalks chopped celery and 4 medium cloves garlic, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Heat oil in covered frying pan to medium heat.
Add garlic (chopped) and saute.
Add bell pepper, celery and onion.
Saute until onion is tender.
Add squash, tomatoes and seasoning to mixture.
Add salt and pepper to taste.
Cover and let simmer on medium heat until vegetables are tender and mixture has thickened. Serve in dish with Parmesan cheese covering top.
