Parmesan Potato Soup
Parmesan Potato Soup is an impressive dinner. Made with 2 lbs. potatoes, cubed, 1 lrg. onion, chopped, 1/2 c. butter, 1/2 c. flour and 1 tsp. basil, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
In a large soup kettle, saute onion in butter until tender. In a separate bowl, mix flour and seasonings.
Stir into onion. Gradually add chicken broth, stirring constantly.
Bring to a boil; cook and stir for 2 minutes.
Add potatoes, carrots, bacon and milk.
Simmer on low heat until potatoes and carrots are tender.
Add cheese. Stir well and heat through.
