Parmesan Chicken
Parmesan Chicken is an moderately easy dinner. Made with 4 boned chicken breasts, halved, 1/2 c. butter or margarine, 1/2 c. dijon mustard, 1/4 tsp. tarragon, crushed and 1 c. fresh bread crumbs, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Melt and mix together the butter, mustard and tarragon.
Dip chicken in mixture, turning to coat all sides.
Mix crumbs, Parmesan cheese, parsley and cayenne.
Dredge chicken, one piece at a time, in crumb mixture, patting with hands to coat.
Arrange chicken in single layer in baking dish.
Bake at 350Β° for 45 minutes.
Serves 8.
