Paella
Paella is an impressive dinner. Made with 1 1/2 lb. chicken pieces, 3 tbsp. olive oil, 3 links chorizo, 1/2 c. smoked ham, cubed and 1 yellow onion, chopped, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Brown chicken pieces in olive oil.
Add chorizo and break apart with a fork. Add ham and brown slightly. Stir in onion, green pepper, tomato and garlic. Push vegetables and meat aside. Add rice to center of pan and sautΓ© 5 minutes.
Then add chicken broth and stir in saffron. Cover. Simmer 25 minutes. Stir in shrimp, pimento and peas. Simmer 5 to 10 minutes.
