Overnight Fruit Salad
Overnight Fruit Salad is an moderately easy dinner. Made with 1 egg, 2 tbsp. lemon juice, 2 tbsp. sugar, 1 (15 oz.) can drained pineapple chunks and 2 large oranges or 1 can mandarin orange sections, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Beat eggs until fluffy and lemon colored.
Add lemon juice and sugar.
Cook in saucepan until smooth.
Stir constantly; cool. Place pineapple chunks, oranges, apples, grapes and bananas in large salad bowl.
Mix gently.
Add egg mixture and mix gently. Add sugar and vanilla to whipped cream.
Fold marshmallows and cream into fruit.
Chill 6 to 8 hours or overnight.
Makes 12 servings.
