Oven German Potato Salad
Oven German Potato Salad is an moderately easy dinner. Made with 1 lb. potatoes, cooked, peeled and sliced (approximately 3 c.), 6 slices bacon, cooked and crumbled (reserving 3 tbsp. drippings), 2 tbsp. chopped onion, 1/4 c. sugar and 1 tbsp. cornstarch, this recipe delivers authentic, satisfying flavors. In 2-quart shallow baking dish, combine potatoes, bacon and onion; set aside.
In small saucepan, combine sugar, cornstarch, mustard and salt.
Gradually add reserved drippings, water, lemon juice and vinegar.
Mix well.
Over medium heat, cook and stir until thickened.
Pour over potatoes.
Let stand several hours to blend flavors; stir in celery.
Bake at 350Β° for 30 minutes or until hot.
