Oven-Fried Eggplant
Oven-Fried Eggplant is an moderately easy dinner. Made with 1/3 c. fine dry breadcrumbs, 2 tbsp. grated parmesan cheese, 1/4 tsp. salt, 1/4 tsp. pepper and 1 (3/4 lb.) eggplant, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Combine the first 4 ingredients in shallow bowl.
Peel eggplant; cut into 1/4-inch slices.
Spread both sides of eggplant slices with mayonnaise.
Dredge in breadcrumb mixture.
Place on a lightly greased baking sheet.
Bake at 400Β°, uncovered, for 10 to 12 minutes, or until browned.
Garnish and serve.
Makes 4 to 6 servings.
