Onion Soup
Onion Soup is an moderately easy dinner. Made with 4 large onions, 2 tbsp. butter, 4 c. rich beef stock or 1 1/2 cans bouillon, 1 tsp. salt and 4 slices hot buttered french bread, toasted, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Slice onions very thin.
Saute in butter until light brown. Heat stock (if using bouillon, add an equal amount of water).
Add to onions and simmer for 20 minutes.
Add salt.
Place toast slice in individual serving dishes.
Add soup and sprinkle with the grated Parmesan cheese.
Serve immediately.
Yields 4 servings.
