Mix flour and soda in bowl.
Make hole in flour and add 1 egg, sugar, 1/3 cup buttermilk, vanilla and shortening.
Mix with your hands until stiff; knead well.
Roll out on cutting board 1/8-inch thick.
Cut with cookie cutter.
Sprinkle with sugar. Place on greased cookie sheet 1 inch apart.
(Add more buttermilk, if needed.)
Bake at 375Β° until brown.
Makes 2 dozen cookies.
