Render salt pork in heavy pan; add chicken to salt pork.
Add salt and pepper; cover with water and bring to boil.
Cook very slow for 3 hours.
The last 20 minutes, bring to rolling boil and add potatoes and dumplings.
Remove entire mixture from pan; thicken stock with flour and pour over all.
