Old Country Chicken Soup
Old Country Chicken Soup is an moderately easy dinner. Made with 3 lb. chicken, cut up or 3 lb. chicken parts, 3 qt. water, 1 large onion, 2 c. celery (include tops) and 6 carrots, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

In large pot, cover chicken with water.
Bring to boil.
Skim off "foam" or pour off and replace water.
Add remaining ingredients and bring to boil.
Simmer until meat is tender. Remove meat to plate.
Cool enough to handle.
Remove meat from bones.
Return meat to broth.
When ready to serve, add cooked rice, noodles or small pasta shapes (alphabets, orzo, etc.).
