Okra Pickles
Okra Pickles is an moderately easy dinner. Made with 2 lb. okra, 3 c. water, 1 c. white vinegar, 1/4 c. pickling salt and 2 tsp. dill seed, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Thoroughly wash okra.
Drain.
Pack into hot clean pint jars, leaving 1/2-inch of headspace.
In saucepan, combine water, vinegar, pickling salt, dill seed and red pepper.
Bring to boiling.
Pour hot liquid over okra in jars, leaving 1/2-inch headspace. Wipe rims and adjust lids.
Process in boiling water bath for 10 minutes. Start timing when water starts to boil. Makes 4 pints.
