Oh-so-Garlicky Bread
Oh-So-Garlicky Bread is an moderately easy dinner. Made with 1 c. roasted red peppers, patted dry and chopped (about 2 peppers), 1/2 c. packed basil leaves, chopped, 2 tbsp. olive oil, 1 oz. medium-grated parmesan cheese and 1 (11 oz.) long loaf italian bread, halved lengthwise, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Heat broiler or grill.
In bowl, combine peppers, basil, oil and cheese.
Place bread, cut side up, on rack 4-inches from heat source (or cut side down on grill over medium coals); toast 3 minutes or until golden.
Rub with garlic; top with pepper mixture and return to broiler 2 minutes or until cheese melts.
Cut crosswise into 8 pieces.
