Oatmeal Yeast Bread
Oatmeal Yeast Bread is an moderately easy dinner. Made with 2 pkg. dry yeast, 3 c. scalded milk, 2/3 c. shortening, 6 1/2 to 7 c. flour, sifted and 1/2 c. lukewarm water, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Dissolve yeast in warm water along with 1 teaspoon sugar. Pour milk over shortening, sugar and salt; cool to lukewarm.
Stir in 1 cup flour, then add yeast.
Add oats and stir.
Add enough additional flour to make a soft dough.
Turn out onto floured board and knead until smooth and satiny adding flour as needed.
Round dough into a ball.
Place in greased bowl.
Brush lightly with melted butter.
Cover and let rise until double in size.
Punch down.
Cover and let rest 10 minutes.
Shape into loaves and let rise.
