Oatmeal Lemon-Cheese Cookies
Oatmeal Lemon-Cheese Cookies is an moderately easy dinner. Made with 1 c. butter flavored crisco, 1 1/4 c. sugar, 1 tsp. lemon extract, 1 1/4 c. flour and 1/2 tsp. salt, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Heat oven to 350°.
Combine shortening, cream cheese and 1 1/4 cups sugar in large bowl.
Beat at medium speed until well blended.
Beat in egg yolk, lemon extract and lemon peel.
Combine flour, oats and salt.
Stir into creamed mixture with spoon until blended.
Drop rounded teaspoons of dough 2 inches apart onto ungreased baking sheet.
Beat whole egg with reserved egg white. Brush over tops of cookies.
Sprinkle lightly with sugar.
Press almond slices lightly on top.
Bake at 350° for 10 to 12 minutes or until edges are lightly browned.
Cook 2 minutes on cookie sheet before removing.
Makes 6 dozen.
