Oatmeal Bread
Oatmeal Bread is an moderately easy dinner. Made with 1 c. uncooked oatmeal (quick), 1 c. milk, scalded, 1/2 c. boiling water, 1/2 c. shortening (bacon drippings are good) and 1/2 c. brown sugar, firmly packed, this recipe delivers authentic, satisfying flavors. Put oatmeal in large bowl.
Stir in milk and boiling water. Add shortening, sugar and salt; let stand until lukewarm. Sprinkle yeast into 1/2 cup of warm water.
Stir until dissolved. Stir into oatmeal mixture.
Add 1/2 the flour; mix until smooth. Add remaining flour, a little at a time.
Mix until dough leaves sides of bowl.
Turn out on board; knead 7 minutes.
Place dough in greased bowl.
Cover with damp cloth; let rise 1 1/2 hours. Knead and shape into loaves.
Bake at 400° for 10 minutes.
Reduce heat to 350° and bake for 40 minutes.
Makes 2 loaves.
