Norma's Potato Salad
Norma'S Potato Salad is an moderately easy dinner. Made with 2 to 3 lb. potatoes, peeled and diced, 1/2 c. salad oil, 2 tbsp. red wine vinegar, salt to taste and pepper to taste, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Boil peeled and diced potatoes in water with a little salt. While the potatoes are still hot, mix salad oil and red wine vinegar and pour over.
Add salt and pepper and mix together.
Put mixture in refrigerator overnight.
The next morning, add diced onion, pickles, celery and chopped boiled eggs.
Then mix together some mayonnaise, mustard and pickle juice according to your own tastes and mix that in with the potatoes until they are as moist as desired.
