Nipponese Eggplant
Nipponese Eggplant is an moderately easy dinner. Made with 2 tbsp. butter or margarine, 3 medium onions, thinly sliced, 1 small eggplant, 1/4 c. soy sauce (approximately) and 1/4 c. water (approximately), this recipe delivers authentic, satisfying flavors. Peel eggplant and cut into 1/2-inch to 3/4-inch cubes. Meanwhile, in a skillet, fry onions in butter.
Add eggplant, soy sauce, water and brown sugar to onions.
Cover and simmer for 20 minutes.
