Navy Bean Soup
Navy Bean Soup is an moderately easy dinner. Made with 2 c. dried navy beans, water (to cover), 1 medium size piece ham hock, 1 bay leaf and 2 medium onions, chopped, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Wash and sort beans.
Place in a large kettle.
Cover with water.
Soak one hour.
Drain.
Cover beans with water again. Add ham hock and bay leaf.
Bring to a boil.
Cover, reduce heat and simmer 1 1/2 hours or until beans are tender.
Add remaining ingredients.
Cover and simmer 20 minutes longer or until vegetables are tender.
Stir occasionally.
Remove bay leaf before serving.
Yield
3 quarts.
