"My Mama's" Elderberry Wine
"My Mama'S" Elderberry Wine is an moderately easy dinner. Made with elderberries, stemmed, 2 gal. boiling water (for every gal. of elderberries after they are stemmed), 3 1/2 lb. cane sugar (for every gal. of liquid), 1 oz. ginger (for every gal. of liquid) and 1/4 oz. cinnamon (for every gal. of liquid), this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Add water to elderberries.
Let stand 2 days. Boil until soft, then strain through a sieve. To every gallon of liquid, add the sugar, ginger, cinnamon and cloves.
Boil for 20 minutes.
Cool. When nearly cold, spread a slice of toast with yeast and float on top of liquid.
Let stand 3 to 4 days.
Skim and let stand in keg or crock until through fermenting. Bottle, but "do not" cork too tightly.
