Place mussels under running water for at least 30 minutes, then clean by scrubbing with a brush.
Remove dark, hairy beard. Place them in a pot with the wine; cover and set over medium-high heat.
When it comes to a boil, lower the heat and shake the covered pot occasionally.
When mussels open, remove immediately from the heat.
In another pan, melt butter and saute garlic.
Add parsley, bread crumbs and soy sauce and stir together.
Discard the empty half of the shell and place mussels (in remaining half shells) in a baking pan.
Spoon 1 teaspoon bread crumb mixture on each mussel.
Place under broiler for a few minutes.
