Munching Peanut Brittle(Microwave) is an moderately easy dinner. Made with 1 c. raw peanuts, 1/2 c. white corn syrup, 1 c. granulated sugar, 1 tsp. baking soda and 1/8 tsp. salt, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.
Stir together peanuts, syrup, sugar and salt in a 1 1/2-quart casserole.
Place in microwave and cook 7 to 8 minutes, stirring well after 4 minutes.
Cook until mixture takes on a slight golden color.
Add butter and vanilla to syrup and cook 1 to 2 minutes more.
Add baking soda and gently stir until light and foamy. Pour mixture onto lightly greased cookie sheet.
Spread real thin. IF you use roasted peanuts, omit the salt and add peanuts after the first 4 minutes of cooking.
Makes about 1 pound after the brittle is broken into pieces.
