Ms. Eunice's Tea Cakes
Ms. Eunice'S Tea Cakes is an moderately easy dinner. Made with 3 2/3 c. sifted flour, 2 1/2 tsp. baking powder, 2/3 c. butter, softened, 1 1/2 c. sugar and 2 eggs (unbeaten), this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Measure sifted flour; add baking powder and salt and sift again.
Cream butter; add sugar gradually, creaming well.
Add eggs, one at a time, beating thoroughly after each.
Add vanilla. Add flour alternately with milk, mixing well after each addition. Chill dough overnight.
Roll out to about 1/4-inch thickness and cut with biscuit cutter.
Prick tops of each cookie with fork to allow steam to escape.
Bake at 400Β° for 9 to 10 minutes or until bottoms are lightly browned.
Makes about 6 dozen.
