Mother's Skillet Candied Sweet Potatoes
Mother'S Skillet Candied Sweet Potatoes is an moderately easy dinner. Made with 6 sweet potatoes, 1 stick butter or margarine, 1 c. sugar, 1/2 c. water and vanilla, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Peel and cut off ends of potatoes; slice lengthwise about 1/4 inch thick.
Mix water, sugar and butter together in an electric skillet with temperature set at 300° to 350°.
When mixture starts to get caramelly, add sweet potatoes in layers.
On each layer, sprinkle small amount of cinnamon, small amount of vanilla (put thumb over opening of bottle and shake out) and a very small amount of lemon juice (do same as with vanilla).
Cover and cook until potatoes are fork-tender (about 20 minutes).
