Moshla chingri is a Bengali-style shrimp curry built around a fragrant masala of onion, ginger, garlic, turmeric, cumin, and green chile. The shrimp cook quickly in the spiced gravy, keeping their snap while the sauce becomes rich enough to spoon over steamed rice.

Rub the shrimp with a pinch of salt and turmeric, then let them stand while the masala starts.
Heat oil, soften the onion, and cook the ginger-garlic paste until the raw aroma fades.
Stir in turmeric, cumin, chile powder, tomato, and a splash of water, cooking until the oil begins to separate.
Add shrimp and green chiles, simmer just until the shrimp turn opaque, then finish with cilantro and serve with rice.
