Mom'S Frittata Di Patate(Potatoes) is an easy dinner. Made with 5 baking potatoes, 5 large size eggs, salt and pepper to taste, 1 tbsp. parmesan cheese and olive oil, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Peel and cut potatoes either in round slices or side slices. Wash the potatoes under cold water; drain.
Pat dry and season with salt and pepper.
Put a large, nonstick frying pan (or one sprayed with Pam) on medium-high heat.
When pan is hot, add enough oil to fully coat bottom of pan.
When oil is hot, add potatoes to the pan and fry on medium-high heat, turning them often so that all potatoes will be crispy and golden.
