Mom's French Apple Cake

In large bowl, mix eggs, sugar and vanilla.
Sift dry ingredients together.
Add apples to dry mixture and stir gently. Add to first mixture and blend well.
Add nuts.
Batter will be very stiff.
Bake in greased and floured 10-inch tube pan at 375Β° for approximately 1 hour.
Cake will be crusty and shiny when done.
Cool in pan.
Serve with whipped cream.
