Mississippi Caviar
Mississippi Caviar is an moderately easy dinner. Made with 2 (15 oz.) cans black-eyed peas, 2 small onions, thinly sliced, cracked pepper to taste, 1/4 c. wine vinegar and 1/2 tsp. salt, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Rinse black-eyed peas and drain.
Layer peas with onion slices in bowl, sprinkling layer with cracked pepper. Process vinegar, salt, garlic and vegetable oil in blender at high speed for minutes, or until well blended.
Pour over peas and onions.
Weeks.
Flavor improves after several days.
