Adjust oven racks to low and middle positions and preheat oven to 350Β°.
Line two large cookie sheets with parchment or foil.
I spray foil with cooking spray.
Whisk flour, salt, baking powder and spices together in medium bowl.
Either by hand or with electric mixer, beat butter until creamy.
Add sugars, beat until fluffy, about 3 minutes.
Beat in eggs one at a time.
Stir dry ingredients into butter-sugar mixture with wooden spoon or large rubber spatula.
Stir in oats and ginger (optional).
Drop by heaping tablespoonfuls to cookie sheet.
Bake 10-12 minutes (check at 10 for chewy, a little longer for crisp).
Slide cookies off parchment to cooling rack.
