Miss Lillian's Peanut Brittle
Miss Lillian'S Peanut Brittle is an moderately easy dinner. Made with 2 c. sugar, 1 c. light corn syrup, 1/2 c. water, 1 tsp. salt and 2 c. shelled, raw peanuts, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Combine the sugar, corn syrup, water and salt in a saucepan. Bring to a boil.
Add the peanuts and cook until nuts become brittle and syrup turns amber.
Add the butter and vanilla.
Cook slowly to 300Β°, stirring occasionally.
Remove from heat.
Add the baking soda; stir well, then pour onto buttered baking sheet. Cool and pull out until very thin.
Break into desired pieces. Makes 1 pound.
